New York (CNN Business)Early in the pandemic, restaurants had to close their dining rooms because of local or national restrictions intended to curb the spread of the coronavirus. Those restrictions have mostly lifted — but thousands of restaurant dining rooms are still unavailable to customers. The closures are happening at a pivotal moment, when restaurants are rethinking formats and moving towards designs that prioritize off-site dining. That means that when we finally emerge from the pandemic, dining rooms could look a lot different. Some restaurants pointed to continuing outbreaks of Covid-19 as a reason for keeping dining rooms closed. At McDonald's US stores, "roughly 3,000 dining rooms remain closed in high-risk Covid areas as we continue to prioritize the health and safety of our customers," company CFO Kevin Ozan said during an analyst call in late October. FORT COLLINS, Colo. (CBS4) – The COVID-19 pandemic forced 90,000 restaurants to close around the country, and those that are open still face challenges. One northern Colorado restaurant beat the odds and opened at the start of the pandemic and still found a way to survive. Sabrina Hulm and her husband Craig Henry followed their dream to start JoJo’s BBQ in Fort Collins. But just as they opened their doors last year, growing coronavirus cases shut down much of the economy. “It got a little scarier and scarier as each day went by, the news changed,” Henry said. They had to close their small dining area and focused instead on delivery and takeout. “Our growth might be low and slow, but we’re just grateful to be here and we’re grateful to have a business,” says Hulm. 11.5% of restaurants have shut down permanently since the coronavirus pandemic started, according to research company Datassential. Several New York legislators are speaking out in opposition as Chick-fil-A prepares to open restaurants at state highway rest stops. Construction is set to begin on the project to develop 27 service areas on the thruway on Thursday, July 29. The project plans to expand the food and drink options at rest stops to include a number of well-known restaurant chains. The project was announced earlier this month. In a letter addressed to New York State Thruway Authority Executive Director Matthew Driscoll, Assemblymember Harry Bronson, of Rochester, said the decision to include Chick-fil-A should be reexamined due to the restaurant chain's history of opposing the rights of LGBTQ+ individuals. "As you may be aware, Chick-fil-A and its founders have a long and controversial history of opposing the rights of LGBTQ+ individuals and families," the letter reads. "Beginning in June 2012, following a series of public comments opposing same-sex marriage by Dan T.
